How to Brew

Step One:
Start with fresh water, just off the boil.
Rinse your filter, then add 20g of freshly ground coffee — medium-fine, like table salt. If you're picking up beans in one of our shops, just ask and we'll grind it for you.
Step Two:
Pour a small amount of water first, just enough to cover the grounds. Let it sit for 30 seconds — this is the bloom, where the coffee releases its gases.
Step Three:
Then pour slowly, in circles, until you reach 300g. Aim to finish by around 2:30–3:00 minutes total. Give it a gentle swirl, and let it drain through.
Espresso
Step One:
18g of coffee, ground fine. If you're picking up beans in one of our shops, just ask and we'll grind it for you.
Step Two:
Distribute evenly in the basket, then tamp with a firm, level press. Lock in and pull for around 25–30 seconds, aiming for roughly 36g out. You're looking for a steady, honey-like flow — not too fast, not too slow.
Step Three:
Taste, adjust the grind if needed, and go again.
